A safety flooring does not come clean with a pad
Floors in the fresh food and wet areas are deliberately made rough, in assessment groups from R10 to R12 to DIN 51130 and in part with a displacement volume, so that liquid is carried away from under the sole of the shoe. A single disc machine with a pad passes over that structure, the dirt stays in the depressions and closes them up — with the displacement volume clogged, the covering loses exactly the slip resistance it was installed for. Work is therefore done with a cylindrical brush, an adequate contact time and a rinse afterwards; that is a matter of occupational safety and not a question of appearance.
Disinfection is the last step, not the only one
Protein, grease and sugar residues bind disinfectant actives and lower the effective concentration, which is why counters and chilled units are cleaned first and only then disinfected, with the contact time stated on the label and, where there is food contact, with a potable water rinse afterwards. Quaternary compounds have two properties here that have to be known: they do not cover non-enveloped viruses, and when overdosed they build up a sticky film of residue that binds dirt. We dose to the plan and set down the agent, the concentration and the time for each area in writing.
Fruit acid and sugar go on working after closing time
Spilt juice, crushed berries and milk residues are more than stains: fruit acid etches terrazzo, marble and limestone, anthocyanins from berries draw into unglazed porcelain stoneware and into cementitious grout, and a sugar solution dries to a sticky film that binds dust and attracts pests. What matters is not the product but the time before it is taken up — the longer it lies, the more likely a shadow remains. We deal with places like that separately during the night round and report where a covering or a joint is permanently marked.
