Chlorides are the enemy of stainless steel, and salt is a chloride
Counters, the fascias of chilled units and plinths consist predominantly of stainless steel, whose corrosion protection is a thin passive layer — chlorides break through it at individual points, and pitting corrosion follows that cannot be polished away, because material is missing. In a store, chlorides come from three directions: road salt through the entrance, chlorine-based disinfectants and sanitary cleaners, and brine from the fresh food area. On stainless steel we work chloride-free, rinse off salt brought in during the winter promptly, and report places where corrosion has already started — otherwise the surface itself becomes a hygiene problem.
A safety flooring does not come clean with a pad
Floors in the fresh food and wet areas are deliberately made rough, in assessment groups from R10 to R12 to DIN 51130 and in part with a displacement volume, so that liquid is carried away from under the sole of the shoe. A single disc machine with a pad passes over that structure, the dirt stays in the depressions and closes them up — with the displacement volume clogged, the covering loses exactly the slip resistance it was installed for. Work is therefore done with a cylindrical brush, an adequate contact time and a rinse afterwards; that is a matter of occupational safety and not a question of appearance.
Disinfection is the last step, not the only one
Protein, grease and sugar residues bind disinfectant actives and lower the effective concentration, which is why counters and chilled units are cleaned first and only then disinfected, with the contact time stated on the label and, where there is food contact, with a potable water rinse afterwards. Quaternary compounds have two properties here that have to be known: they do not cover non-enveloped viruses, and when overdosed they build up a sticky film of residue that binds dirt. We dose to the plan and set down the agent, the concentration and the time for each area in writing.
