Fine organic dust can deflagrate in combination with air and a source of ignition, and that is exactly the situation created when flour is blown off surfaces with compressed air — the cloud of dust is the risk, not the deposit. Correct practice is to take it up damp or to vacuum it with a suitable industrial vacuum, high-level surfaces first, and not to let deposits build up. There is a second reason as well: flour and dough residues are food for cockroaches, flour moths and biscuit beetles, which is why crevices, plinths and machine feet in the bakery area belong to the standard programme and not to the extras.
The smell in a store almost always comes out of the floor drain
In drains, condensate lines and grease traps a biofilm forms, a slimy layer of microorganisms that gives off a smell and in which disinfectants scarcely act in depth: the outer layers are killed off, the core remains and grows back. What helps is mechanical cleaning with the grating taken out, a brush and a bucket, together with enzymatic or microbiological products and time, rather than chlorine and pressure. And a drain that has run dry no longer has a water seal — the sewer then stands open in the room, and that smells with every change of temperature.
Chlorides are the enemy of stainless steel, and salt is a chloride
Counters, the fascias of chilled units and plinths consist predominantly of stainless steel, whose corrosion protection is a thin passive layer — chlorides break through it at individual points, and pitting corrosion follows that cannot be polished away, because material is missing. In a store, chlorides come from three directions: road salt through the entrance, chlorine-based disinfectants and sanitary cleaners, and brine from the fresh food area. On stainless steel we work chloride-free, rinse off salt brought in during the winter promptly, and report places where corrosion has already started — otherwise the surface itself becomes a hygiene problem.
