Fresh goods belong in the range of about plus two to four degrees, frozen goods at minus eighteen, hot holding above sixty-five degrees. The critical point is the zone in between: cooked food has to come below ten degrees promptly, because in the lukewarm phase the bacterial count rises. Portioning into shallow containers, using the blast chiller, putting lids on only later — those are the handling steps our staff are trained in.
Gloves are no substitute for washing hands
The most common hygiene error in a kitchen is cross-contamination via hand, board and knife: raw meat and poultry, then straight on to the salad without a change. Disposable gloves do not improve that; they are simply changed less often than hands are washed. We work with colour-coded boards, a change whenever the product changes, and hand washing as a fixed step rather than a matter of feel.
Allergen information is a legal duty in Austria and tied to a person
Food that is not pre-packed has to carry information on the fourteen allergens subject to labelling, in Austria customarily with the letters A to R, and the information may be given verbally provided a trained person is available in the business for that purpose. For a kitchen assistant that means: they have to know where the recipe with the allergen details is kept, and that an ingredient is not substituted without reporting it back. We point every member of staff to this before their first shift.
