Fat is dissolved with an alkali, limescale with an acid — anyone who tries both with one agent removes neither. On surfaces with food contact, the disinfectant is followed by a rinse with drinking water, otherwise residues of the active substance stay on the board. And disinfection only works on a surface that is already clean, because protein and fat residues bind the active substance. Our staff are trained in that sequence and in the contact times.
Kitchen fires begin in the extract duct
Resinified fat settles inside the extractor hood; if flames flash over at the range, that fat burns on in the duct and carries the fire across floors. That is why the flame-arresting filters have to be cleaned daily and the ducts at fixed intervals by a specialist firm — in the event of a claim the insurer asks about both. The daily work on filters and grease trays we take on; the duct we do not, and we say when it is due.
The wrong agent makes a kitchen floor more dangerous
Commercial kitchen floors are designed for slip resistance, usually in class R11 or R12 with a displacement volume. That effect comes from the surface texture — lay a care film or an agent with film formers over it and the texture is filled in, and with a mist of fat on top the floor becomes slippery. The correct approach is an alkaline degreaser without film formers, sufficient mechanical action and a rinse. We work that way and report it when a film has built up that needs a deep clean.
