A banquette and a curtain are tested components
Textiles in the foyer, the restaurant and the conference room are tested for their fire behaviour and classified to EN 13501-1; on some fabrics the flame-retardant treatment is applied to the surface and is water-soluble, so wet cleaning takes it away with it and the certification no longer covers the item. On top of that comes the ordinary risk: too much solution in the upholstery core draws dissolved dirt upwards as it dries and leaves rings instead of cleanliness. That is why the care label is read, the work is done dry or with little solution, marks are pre-treated individually, and in case of doubt the supplier is asked. We record which fabric was treated in which way, so that the house can answer the question during an inspection.
A smell in the house is a cleaning question, not a fragrance question
The three common sources are dried-out water traps in rarely used floor gullies and basins, through which drain air reaches the room; biofilm in wastes and overflows; and textiles — curtains, upholstery, carpet backing — which store kitchen grease and smoke and give it off again when they warm up. Fragrance dispensers lay themselves over the top but take nothing away, and the guest smells both. We check floor gullies in back-of-house rooms, top up dry traps, report them in writing and put the textile surfaces on a cycle of their own.

What many hands touch in a short space of time are tongs, dispenser levers, jug handles, stacks of trays and the handles of chilled display units — that is where interim cleaning belongs, at the service interval, not merely the table after it has been cleared. Alongside that goes the hard rule on cloth separation: a cloth that has been in a sanitary area has no business in a food area, which is why we work with a colour system and prepared sets of cloths.
